I’m back……

I know, it’s been 2 years….but I’m back. I originally created this blog as a project for one of my MBA classes. I was hoping by creating a health blog I would get back on track, but I failed. Things have changed since. Last June I got engaged to a wonderful man and I decided I wanted to be the healthiest me on my wedding day….I wouldn’t mind looking good in a bikini on my honeymoon either!

I thought I was making enough changes but after seeing our engagement photos, I woke up to reality… I have a lot to do before August 2015. In October, I finally joined a gym, hired a virtual trainer(who was local) and changed my eating habits. Changes were slow at first but everything is finally coming together.

Since then I quit my trainer and decided to take this journey on all by myself… With a little help from Bodybuilding.com.com . I joined their 2015 $200k Transformation Challenge and honestly, I really think I have a shot at winning this.

All the knowledge I’ve obtained from my first weight loss journey and my current weight loss journey is really going to help achieve all my goals. I’m always researching new fitness trends, recipes, and healthy living tips, I thought it wouldn’t hurt to share it with you. I have so many posts planned from the first few months of this journey and so many more to come. Post include everything from food, fitness trackers, laser lipo, specialty workout clothes, and anything related to fitness and health. I’m really excited to get this going again, I’m making changes and hope you will too.

Mochaccino Protein Shake

I used to drink at least one protein shake a day. It was always the same… Fruit & vanilla protein. One morning, after my workout, I decided to get my protein shake at the gym. I was in for a great cappuccino/mocha/ coffee treat. Once I tried this, I don’t think I’ll ever go back to my fruit and vanilla. Here’s how to make it:

1 scoop Syntha 6 Mochaccino Protein Powder
1 cup skim milk
Some ice

Blend and drink. Yum!Yum!


Easy ‘Smashed’ Potatoes

It’s that time of year, the time to eat lots of turkey without going overboard. Since I was young, mashed potatoes have been one of my favorite foods of all time. Most of the potatoes I’ve had are usually drenched in butter and salt. Here’s a simple recipe that allows me to overindulge with my favorite foods.

5lbs white potatoes, peeled and diced
Minced garlic
1 container light sour cream
1 tablespoon light butter or butter substitute

1. In a large saucepan, fill pot with enough water to cover potatoes. I like to add some garlic to the water to give the potatoes more flavor.
2. Boil, then bring to a simmer. Simmer for 20-30 mins or until potatoes are soft enough to smash.
3. Drain water and smash the potatoes in whatever way is easiest, I just use a spoon and hope for the best.
4. Add sour cream, butter and garlic to taste. Stir. Add salt & pepper if you like as well.

They were a hit at our pre- Thanksgiving dinner, I’m sure they will be a hit at yours.


Salsa Cream Cheese Chicken

Here goes another great, fast, cheap, and satisfying meal, especially if you’re craving tacos, etc.

Here’s what you need:
1. Frozen chicken breast- enough to cover the bottom and have enough room for the rest of the ingredients
2. Jar of salsa
3. 1 can of black beans
4. 1 can of corn
5. 1 package low fat cream cheese

Place ingredients 1-4 in the slow cooker. Cook for 4-5 hours. Add cream cheese. Cook for 30 mins to 1 hour…. Voilà.

Eat by itself, serve with tortilla chips, on top of rice, etc.

Not the best shot, but it taste SO much better than it looks!


Fast Food Cheat Sheet

Ideally we want our food freshly cooked and made with the best quality ingredients. Often reality sets in and we realize that there’s just not enough time to cook. Throughout the years I’ve found some fast food items that really aren’t horrible (under 400 calories, 10 grams of fat and plenty of protein. Lets not discuss sodium. 😉 ).Whether you overslept or forgot your lunch on the counter, here’s a few suggestions to get you by.

1. Dunkin Donuts: Egg White Flatbread available in veggie or turkey sausage


2. Tim Horton’s: Egg White Ham & Cheese on an English Muffin or Flatbread(maple is so good)


3. McDonald’s: Grilled Chicken Sandwiches – Classic & Bacon Ranch. The Bacon Ranch only has about 30 calories more than the classic so I go for the Bacon.


4. Wendy’s: Apple Pear Salad- Half sized with Pomegranate Vinegarette. If you’re really hungry, skip the candied pecans and get a full size.


Pumpkin Brownies

So I was having a guest over the other night and decided it might be nice to bake something to show off my healthy homemaking abilities. Unfortunately, my homemaking abilities aren’t the highest on my talent list, so I never got to bake the brownies. Fortunately, my guest did not like pumpkin so it was not an issue that I didn’t have time.

Later in the week, I did have a chance to try the recipe that I found at Cookies and Cups. Here’s another great easy, semi-healthy recipe for the Fall season.

1 Box Family Size Brownie Mix
1 Can 100% Pumpkin Purée
1 Egg

Preheat oven to 350. Mix all ingredients and bake for about 40 mins. in a square pan. The consistency is thicker, kind of fudge like but it definitely fulfills my sweet tooth!


Candied Yams & Apples

Fall’s here and the apple crop just isn’t the same this year…so sad! But there are still apples and boy do they taste yummy. With Thanksgiving coming, I start to get obsessed with sweet potatoes/ yams (is there really a difference?). Another lazy Sunday, another lazy slow cooker dish but oh it taste so good and candied! Here’s what you’ll need:

3 Yams, peeled and diced

3 apples, diced. I used Gala but I don’t know much about cooking apples

2 tablespoons butter substitute such as Olivio

Maple Syrup, light or low sugar, obviously

Cinnamon & Nutmeg


Throw everything in the slow cooker and let it cook for 4-5 hours. When it’s done it taste like some sort of sweet candy applesauce, yum. Forget the Ice Cream, I’ve got YAMS!
